25 Days of Cookies, Day Two

I don’t claim to be the best baker, nor do I claim to be particularly gifted when it comes to cooking. But, I love to do both. I have had time on my hands since I graduated and since I have not been getting many hours at work. I’ve been wanting something to do with my spare time and I had this brilliant plan, lets make a batch of cookies for the 25 days leading up to Christmas! Simple right? HA! I didn’t get a chance to make cookies yesterday so I made two batches tonight. I have a feeling I will be doing this regularly …

The first batch of cookies I made was a recipe I found on another blog, Fields of Cake and Other Good Stuff.

They looked simple and tasty so I went out and bought some new olive oil (not Nudo but some made in California which was very tasty to me!) They turned out crispy on the outside and chewy on the inside. Beautiful! I really liked them and they were approved of by the husband and the Uncle and Uncle’s Girlfriend. Success!

The second batch of cookies I made was a old family recipe. Ginger Crinkles. I did the regular recipe and added chopped up crystallized ginger to add a little kick to them. Of course those turned out wonderful! I always love me some Ginger Crinkles. They are best frozen and then eaten straight from the freazer, they slowly melt in your mouth and get even chewier!

Tomorrow is another day and of course another batch of cookies!
